Avacado and Vegetable Omlette

Serves:1 Time 2 minutes

Ingredients:
  • 2 large eggs

  • 2 teaspoons milk

  • 1/2 avocado, sliced

  • 1/2 cup chopped bell peppers (any colour)

  • Salt and pepper to taste

  • Chopped baby tomatoes

  • Chopped baby spinach or kale

  • Grated cheese (optional)

  • 1 teaspoon olive oil or cooking spray

Method:

  1. Prepare the Vegetables:
    Chop the bell peppers, baby tomatoes, and spinach or kale into small pieces.
    Place the chopped bell peppers, tomatoes, and greens in a microwave-safe bowl.
    Add a splash of water (about 1-2 teaspoons) and microwave on high for 1-2 minutes until slightly softened.
    Drain any excess water.

  2. Mix the Eggs:
    In a bowl, whisk together the eggs and milk until well combined.
    Season with salt and pepper to taste.

  1. Combine:
    Add the cooked vegetables to the egg mixture and stir gently.
    If using grated cheese, mix it in now.

  1. Prepare the Dish:
    Lightly spray a microwave-safe dish or plate with cooking spray or a little olive oil.
    Pour the egg mixture into the dish.

  1. Microwave:
    Cover the dish with microwave-safe plastic wrap or a microwave-safe lid, leaving a small vent.
    Place in your Midea 45L Digital Microwave on high for about 1-2 minutes, or until the eggs are fully set.
    Check if the eggs are cooked through; if not, microwave for an additional 30 seconds to 1 minute.

  1. Serve:
    Carefully remove from the microwave. Let it sit for a minute, then arrange sliced avocado on top or the side for added flavour. Enjoy your nutritious vegetable.
